Cooking: How to Make a Super Moist Cake

It's still birthday season here and I just finished frosting the cake for Mr. VIP :) Mmm it is tasty! I used my grandma's trick for making her cakes special and the Hubbs has been requesting it ever since we went gluten free. You see, GF cooking is dry... and sometimes just plain uneatable, lol. But my grandma told me her secret. Any cake can be made extra moist and full of flavor, all you need is one simple ingredient: Jell-O.

Yup, Jell-O softens the cake, adds moisture and tons of flavor. Plus you can get creative with your combinations; chocolate cake and cherry Jell-O, lemon cake and strawberry Jell-O. vanilla cake and orange Jell-O, etc. The possibilities are endless! Here's the step-by-step on how to make this yummy cake:

  1. Simply bake your cake as specified on the box. Remove from oven and let cool in pan for about 5 to 10 minutes.
  2. While your cake is cooling prepare Jell-O. Again follow the directions as indicated on the packaging.
  3. Use a fork or knife to pierce the top of the cake. Careful, don't sink your utensil all the way through. This will cause all the Jell-O to pool at the bottom of the cake.
  4. Pour the liquid Jell-O mixture over the cake, cover evenly.
  5. Cover cake with aluminum foil and allow to set in fridge for four hours.
That's it! You can tell I switched the Jell-O last minute to lime, haha. Any flavor will do. We love this cake with Cool Whip instead of regular butter-cream. Most frosting seem too heavy, but you may want to experiment with different options. Enjoy!
